Royal Graham Gems

A simple recipe for Graham Gems, a type of quick bread.

Ingredients

  • 1 1/2 pints Graham flour
  • 1/2 pint Cornmeal
  • 1 teaspoonful Salt
  • 2 teaspoonfuls Baking powder
  • 1 1/4 pints Milk
  • as needed Butter or cooking spray (For greasing gem pans.)

Instructions

  1. 1In a large bowl, sift together the Graham flour, cornmeal, salt, and baking powder.
  2. 2Add the milk to the dry ingredients and mix until a moderately stiff batter forms.
  3. 3Grease cold gem pans well with butter or cooking spray. Fill each gem pan about halfway with the batter. Bake in a preheated solid hot oven at 400°F (200°C) for 10 to 12 minutes, or until golden brown.
