Rice Waffles
Rice waffles based on the Soft Waffles recipe.
Ingredients
- 1 quart All-purpose flour
- 1/2 teaspoon Salt
- 1 teaspoon Sugar
- 2 teaspoons Baking powder
- 1 tablespoon Butter
- 2 Eggs
- 1 1/2 pints Whole milk
- 1 cupful Rice
- as needed Sugar
Instructions
- 1In a bowl, sift together the flour, salt, sugar, and baking powder. Rub in the butter until the mixture resembles coarse crumbs. In a separate bowl, whisk the eggs and milk. Add the wet ingredients to the dry ingredients and mix until a smooth batter forms. The batter should run easily from a pitcher.
- 2Stir 1 cupful of rice, free from lumps, into the batter. Heat a waffle iron and grease it carefully each time. Pour batter into the hot waffle iron, filling it about 2/3 full. Close the iron and cook until the waffles are brown, then flip and cook the other side until brown.
- 3Sift sugar on the waffles and serve hot.
