Rice Pudding No. 3

A classic rice pudding recipe.

Ingredients

  • 1/2 cupful Rice
  • 3/4 pint Whole milk
  • 4 Apples, peeled, cored, and stewed
  • 1/3 cupful Sugar
  • 4 Eggs
  • 1 tablespoon Butter

Instructions

  1. 1Boil the rice in the milk until it reduces to a pulp. This should take about 10 minutes.
  2. 2Beat the cooked rice with the stewed apples and sugar for 10 minutes. Set aside to cool.
  3. 3Carefully mix in the egg whites, whipped to a stiff froth. Butter a mould. Pour in the pudding. Set the mould in a saucepan with boiling water to reach halfway up its sides. Steam slowly for 25 minutes. Let it stand for 3 minutes before turning out. Serve with Custard Sauce.
