Rice Pudding No. 3
A classic rice pudding recipe.
Ingredients
- 1/2 cupful Rice
- 3/4 pint Whole milk
- 4 Apples, peeled, cored, and stewed
- 1/3 cupful Sugar
- 4 Eggs
- 1 tablespoon Butter
Instructions
- 1Boil the rice in the milk until it reduces to a pulp. This should take about 10 minutes.
- 2Beat the cooked rice with the stewed apples and sugar for 10 minutes. Set aside to cool.
- 3Carefully mix in the egg whites, whipped to a stiff froth. Butter a mould. Pour in the pudding. Set the mould in a saucepan with boiling water to reach halfway up its sides. Steam slowly for 25 minutes. Let it stand for 3 minutes before turning out. Serve with Custard Sauce.
