Rice Pudding No. 2

A classic rice pudding recipe.

Ingredients

  • 1 cupful Rice
  • 1 quart Whole milk (Originally milk.)
  • 4 Eggs
  • 1 tablespoonful Butter
  • 1 cupful Sugar
  • 1 pinch Salt
  • Brandy (Used in Brandy Sauce (see instructions).)

Instructions

  1. 1Boil the rice in 1 pint of milk until tender.
  2. 2Remove from heat. Add eggs, sugar, salt, and the remaining milk, beaten together, and mix well.
  3. 3Pour the mixture into a pudding dish. Break the butter into small pieces and place on the surface. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
  4. 4Serve warm with Brandy Sauce. To make the Brandy Sauce: Proceed as directed for Wine Sauce, substituting brandy for wine.
