Rice Muffins

A simple recipe for rice muffins.

Ingredients

  • 2 cupfuls Cold boiled rice
  • 1 pint All-purpose flour
  • 1 teaspoonful Salt
  • 1 tablespoonful Sugar
  • 1 1/2 teaspoonfuls Royal Baking Powder
  • 1/2 pint Milk
  • 3 Eggs
  • as needed Butter or cooking spray (For greasing muffin pans.)

Instructions

  1. 1In a bowl, dilute the cold boiled rice, free from lumps, with milk and beaten eggs. In a separate bowl, sift together the flour, sugar, salt, and Royal Baking Powder. Add the dry ingredients to the rice mixture and mix until a smooth, rather firm batter forms.
  2. 2Preheat oven to 400°F (200°C). Grease muffin pans well with butter or cooking spray. Fill each muffin cup 2/3 full with the batter. Bake in the preheated oven for 15 minutes, or until golden brown.
