Rice Griddle Cakes
A simple recipe for griddle cakes made with cooked rice.
Ingredients
- 2 cupfuls Cold boiled rice
- 1 pint All-purpose flour
- 1 teaspoonful Granulated sugar
- 1/2 teaspoonful Salt
- 1 1/2 teaspoonfuls Baking powder
- 1 Egg
- 1/2 pint Milk
- as needed Maple syrup
Instructions
- 1In a large bowl, sift together the flour, sugar, salt, and baking powder. Add the cold boiled rice, ensuring there are no lumps. In a separate bowl, beat the egg and mix with the milk. Dilute the rice with the beaten egg and milk mixture. Mix everything into a smooth batter.
- 2Heat a griddle or large skillet over medium heat. Once hot, pour 1/4 cup of batter onto the griddle for each cake. Make the cakes large. Cook until nicely browned on both sides, about 2-3 minutes per side.
- 3Serve the rice griddle cakes immediately with maple syrup.
