Rice Flour Crackers

A simple cracker recipe using rice flour, adapted from a historical recipe.

Ingredients

  • 1 1/2 pints Flour
  • 1/2 pint Rice flour (Originally corn starch. Substituted with rice flour as per the recipe instructions.)
  • 1/2 teaspoonful Salt
  • 1 tablespoonful Sugar
  • 1 tablespoonful Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
  • 1 teaspoonful Baking powder (Originally Royal Baking Powder.)
  • 1/2 pint Milk
  • as needed Milk (For washing the crackers.)

Instructions

  1. 1Sift together flour, rice flour, salt, sugar, and baking powder in a large bowl.
  2. 2Rub the butter (or shortening) into the dry ingredients until the mixture resembles coarse crumbs.
  3. 3Add milk and mix into a smooth, firm dough.
  4. 4Lightly flour a clean surface. Turn out the dough and give it a few quick kneadings to complete smoothness. Set it under a cloth for 10 minutes. Then, roll it with a rolling-pin exceedingly thin.
  5. 5Cut the rolled dough with a round cutter. Prick each cracker with a fork.
  6. 6Lay the crackers upon a slightly greased baking tin. Wash over with milk. Bake in a hot oven at 400°F (200°C) for 7-8 minutes, or until golden brown.
  7. 7When cold, store the crackers for use.
