Red Currant Fruit Ice
A refreshing fruit ice made with red currants and raspberries.
Ingredients
- 3 pints Ripe red currants
- 1 pint Red raspberries
- 1/2 pint Water
- 12 ounces Granulated sugar
- 1/2 pint Water
Instructions
- 1Combine the ripe currants, raspberries, and 1/2 pint of water in a saucepan or basin. Place the mixture over medium heat and allow it to simmer for a few minutes, until the fruit softens and releases its juices.
- 2Strain the simmered fruit mixture through a fine-mesh sieve or hair sieve to remove the seeds and solids. Discard the solids.
- 3To the strained fruit juice, add the sugar and 1/2 pint of water. Stir until the sugar is dissolved. Pour the mixture into a freezing can and freeze according to your ice cream maker's instructions, or until solid.
