Raspberry Griddle Cakes

Raspberry Griddle Cakes, prepared similarly to Huckleberry Griddle Cakes.

Ingredients

  • 1 1/2 pints All-purpose flour
  • 1 teaspoonful Salt
  • 1 tablespoonful Brown sugar
  • 2 teaspoonfuls Baking powder
  • 2 eggs Eggs
  • 1 pint Whole milk
  • 1/2 pint Raspberries

Instructions

  1. 1Sift together flour, sugar, and salt and baking powder. Add beaten eggs, milk, and washed and picked over raspberries. Mix into a batter that will run from a pitcher in a thick, continuous stream.
  2. 2Have griddle hot enough to form a crust soon as batter touches it. Pour batter onto the hot griddle. In order to confine the juice of the berries, turn quickly, so as to form a crust on the other side; turn once more on each side to complete baking. Cook for approximately 2-3 minutes per side, or until golden brown.
