Quick Buckwheat Cakes No. 1

A simple recipe for buckwheat cakes.

Ingredients

  • 1 pint Buckwheat flour
  • 2 heaping teaspoonfuls Baking powder
  • 1 teaspoonful Salt
  • 1 scant tablespoonful Brown sugar or molasses
  • 1 pint Cold water

Instructions

  1. 1In a large bowl, whisk together the buckwheat flour, baking powder, salt, and brown sugar or molasses.
  2. 2Add cold water to the dry ingredients and stir gently until just combined. Do not overmix. The batter should be slightly lumpy.
  3. 3Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve immediately.
