Quick Buckwheat Cakes No. 1
A simple recipe for buckwheat cakes.
Ingredients
- 1 pint Buckwheat flour
- 2 heaping teaspoonfuls Baking powder
- 1 teaspoonful Salt
- 1 scant tablespoonful Brown sugar or molasses
- 1 pint Cold water
Instructions
- 1In a large bowl, whisk together the buckwheat flour, baking powder, salt, and brown sugar or molasses.
- 2Add cold water to the dry ingredients and stir gently until just combined. Do not overmix. The batter should be slightly lumpy.
- 3Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve immediately.
