Preserved Peaches
A classic recipe for preserving peaches.
Ingredients
- as needed ripe, but not soft Peaches
- as needed equal quantity to peaches Granulated Sugar
Instructions
- 1Take ripe, but not soft peaches. Pour boiling water over them to take off skins, which will pull off easily.
- 2Weigh equal quantities of fruit and sugar; put them together in an earthen pan overnight.
- 3In the morning, pour off the syrup and boil for a few minutes. Remove any scum. When the syrup boils up again, add the peaches. Boil them slowly for 45 minutes. Take out the peaches and put them in jars. Boil the syrup for 15 minutes more, and pour over the peaches.
