Pound Cake

A classic pound cake recipe from 1888.

Ingredients

  • 1.5 cupfuls Butter
  • 2 cupfuls Sugar
  • 7 Eggs
  • 1.5 pints Flour
  • 1 teaspoonful Royal Baking Powder
  • 1 teaspoonful Royal Extract Nutmeg

Instructions

  1. 1In a large bowl, rub the 1 1/2 cupfuls butter and 2 cupfuls sugar together until the mixture is white and light cream. This may take 5-7 minutes.
  2. 2Add 3 of the 7 eggs, 1 at a time, beating for 5 minutes between each addition. Then add the remaining 4 eggs, 2 at a time, beating for 5 minutes between each addition.
  3. 3Sift together 1 1/2 pints flour and 1 teaspoonful Royal Baking Powder. Add to the batter.
  4. 4Add 1 teaspoonful Royal Extract Nutmeg and mix into a smooth, medium batter.
  5. 5Preheat oven to 350°F (175°C). Line a cake tin with paper. Pour the batter into the prepared tin and bake in a steady oven for 50 minutes, or until a toothpick inserted into the center comes out clean.
