Potatoes, Lyonnaise
A classic French potato dish.
Ingredients
- 12 potatoes Potatoes
- as needed Butter (Originally good dripping. Substituted with butter for modern preference.)
- 1 small Onion
- as needed Parsley, minced
Instructions
- 1Parboil the potatoes until they are partially cooked but still firm. Peel them and let them cool completely.
- 2Heat butter in a frying pan. Add the chopped onion and cook until it begins to change color, about 1 minute.
- 3Add the cold, diced potatoes to the pan. Stir well and cook for about 5 minutes, ensuring the potatoes do not break apart and do not brown.
- 4Just before serving, add the minced parsley. Drain the potatoes in a heated colander to remove excess oil. Serve immediately.
