Potato Soup (4 quarts)
A simple and hearty potato soup recipe.
Ingredients
- 2 ounces Bacon, chopped
- 6 Onions, peeled and chopped
- 1 saltspoonful Black pepper
- 1 teaspoonful Salt
- 4 quarts Hot water
- 1 quart Potatoes, peeled and sliced
Instructions
- 1In a saucepan, add the bacon and cook until it renders some fat and becomes slightly crispy. Add the chopped onions and cook until softened, about 5 minutes. Season with pepper and salt.
- 2Add the hot water to the saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes. Add the sliced potatoes and continue to simmer for 45 minutes, or until the potatoes are very soft and have started to break down.
