Potato Scones
A light and delicate scone recipe using potatoes, perfect with butter.
Ingredients
- 6 medium Potatoes
- 1/2 pint Graham flour
- 1/2 teaspoonful Salt
- 1/4 teaspoonful Baking powder
- 1 tablespoonful Butter
- 1 cupful Cream
- 1 Egg
- 1/2 teaspoonful Ground cloves (Originally Royal Extract Cloves. Substituted with ground cloves.)
Instructions
- 1Peel and boil the potatoes until very well done. Drain off the water and let them dry, uncovered, near the heat. This will take about 10 minutes.
- 2Mash the potatoes exceedingly smooth. Add the butter, egg, and cream. Sift together the Graham flour, salt, and baking powder, and add to the potato mixture. Mix well.
- 3Once the mixture is quite cold, add the ground cloves. Mix into a firm dough. Flour a board with Graham flour, turn out the dough, and roll it to a thickness of 1/2 inch. Cut with a sharp knife into oblong pieces, about the length of soda crackers and 2/3 as wide.
- 4Bake on a hot griddle, pricking them with a fork to prevent blistering. Cook for approximately 15 minutes, or until golden brown. Serve warm with butter.
