Potato Croquettes

Delicious and crispy potato croquettes, perfect as a side dish or appetizer.

Ingredients

  • 1 cupful Cold mashed potatoes
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Nutmeg
  • 1 tablespoonful Butter
  • 2 large Eggs
  • 2 tablespoons Fresh parsley, minced
  • 1 cup Bread crumbs
  • 2 cups Vegetable oil or butter (Originally lard. Substituted with vegetable oil or butter for modern preference.)

Instructions

  1. 1In a bowl, season the cold mashed potatoes with pepper, salt, and nutmeg. Mix well to combine.
  2. 2Beat the potato mixture until creamy. Add the melted butter and mix. Add the beaten eggs and minced parsley, mixing until well combined.
  3. 3Roll the potato mixture into small balls. Dip each ball in beaten egg, then in bread crumbs, ensuring they are fully coated.
  4. 4Heat the vegetable oil or butter in a deep fryer or large skillet to 350°F (175°C). Fry the croquettes in hot oil until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
