Potato Croquettes
Delicious and crispy potato croquettes, perfect as a side dish or appetizer.
Ingredients
- 1 cupful Cold mashed potatoes
- 1/4 teaspoon Black pepper
- 1/4 teaspoon Salt
- 1/8 teaspoon Nutmeg
- 1 tablespoonful Butter
- 2 large Eggs
- 2 tablespoons Fresh parsley, minced
- 1 cup Bread crumbs
- 2 cups Vegetable oil or butter (Originally lard. Substituted with vegetable oil or butter for modern preference.)
Instructions
- 1In a bowl, season the cold mashed potatoes with pepper, salt, and nutmeg. Mix well to combine.
- 2Beat the potato mixture until creamy. Add the melted butter and mix. Add the beaten eggs and minced parsley, mixing until well combined.
- 3Roll the potato mixture into small balls. Dip each ball in beaten egg, then in bread crumbs, ensuring they are fully coated.
- 4Heat the vegetable oil or butter in a deep fryer or large skillet to 350°F (175°C). Fry the croquettes in hot oil until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
