Poor Man's Pudding.
A simple steamed pudding with raisins and currants.
Ingredients
- 1/2 cup Butter or vegetable shortening (Originally suet. Substituted with butter or vegetable shortening for modern preference.)
- 1 1/2 cup Raisins
- 1/2 cup Currants
- 1 1/2 cup Grated Corn Muffins or Bread
- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 1/2 cup Brown sugar
- 1 pint Milk
- 2 tablespoons Butter (For serving)
- 2 tablespoons Sugar (For serving)
Instructions
- 1Chop the suet (or use butter/shortening). Wash and pick over the currants. Grate the corn muffins or bread.
- 2In a large bowl, mix together the chopped suet (or butter/shortening), raisins, currants, grated corn muffins or bread, flour, baking powder, brown sugar, and milk. Mix well until combined.
- 3Grease a pudding mold. Pour the pudding mixture into the mold. Place the mold in a saucepan with boiling water, ensuring the water reaches halfway up the sides of the mold. Steam for 2 hours.
- 4Carefully turn the pudding out onto a serving dish. Serve warm with butter and sugar.
