Poor Man's Corn Gems
A simple cornmeal-based recipe for corn gems.
Ingredients
- 1 pint Cornmeal
- 1 pint All-purpose flour
- 1 teaspoonful Salt
- 2 teaspoonfuls Royal Baking Powder
- 1/3 pint Milk
- 1/3 pint Water
- as needed Butter or cooking spray (For greasing the gem pans.)
Instructions
- 1In a large bowl, sift together the cornmeal, flour, salt, and Royal Baking Powder.
- 2Add the milk and water to the dry ingredients. Mix until just combined, forming a firm batter.
- 3Grease cold gem pans generously with butter or cooking spray. Fill each cup about 2/3 full with the batter.
- 4Preheat oven to 400°F (200°C). Bake for 15 minutes, or until golden brown.
