Plum Pudding No. 2
A traditional plum pudding recipe.
Ingredients
- 1 1/2 cupfuls Grated bread
- 1 1/2 cupfuls Butter or vegetable shortening (Originally very finely chopped suet. Substituted with butter or vegetable shortening for modern preference.)
- 1 1/2 cupfuls Raisins (Seeded, currants, washed and picked.)
- 1 1/2 cupfuls Coffee sugar
- 1/2 cupful Citron
- 1/2 cupful Milk
- 1/2 cupful Orange marmalade
- 4 eggs Eggs
- 2 cupfuls Flour
- 1 teaspoonful Baking powder (Originally Royal Baking Powder.)
- 1 teaspoonful Cinnamon (Originally Royal Extract Cinnamon.)
- 1 teaspoonful Cloves (Originally Royal Extract Cloves.)
- 1 teaspoonful Nutmeg (Originally Royal Extract Nutmeg.)
Instructions
- 1In a large bowl, combine the grated bread, butter or vegetable shortening, raisins, coffee sugar, citron, milk, orange marmalade, eggs, flour, baking powder, cinnamon, cloves, and nutmeg.
- 2Put the mixture into a well-buttered mould. Place the mould in a saucepan with boiling water, ensuring the water reaches halfway up the sides of the mould. Steam for 3 1/2 hours.
- 3Carefully turn the pudding out onto a serving dish and serve with Royal Wine Sauce.
