Pickled Oysters
A classic recipe for pickled oysters.
Ingredients
- 2 gallons Large oysters
- 1 pint Oyster juice
- 1 quart White vinegar
- 1 tablespoonful Whole black peppercorns
- 1 tablespoonful Whole cloves
- 1 tablespoonful Mace
- 1 tablespoonful Salt
Instructions
- 1Drain and rinse the oysters.
- 2In a saucepan, combine the oyster juice and vinegar. Bring to a simmer over medium heat. Scald and skim until clear. Add the peppercorns, cloves, mace, and salt. Scald for 1 minute.
- 3Throw the oysters into the pickling liquid. Let them just come to a boil. Allow the oysters to cool completely before storing. The oysters should be pickled the day before being wanted.
