Pickled Oysters

A classic recipe for pickled oysters.

Ingredients

  • 2 gallons Large oysters
  • 1 pint Oyster juice
  • 1 quart White vinegar
  • 1 tablespoonful Whole black peppercorns
  • 1 tablespoonful Whole cloves
  • 1 tablespoonful Mace
  • 1 tablespoonful Salt

Instructions

  1. 1Drain and rinse the oysters.
  2. 2In a saucepan, combine the oyster juice and vinegar. Bring to a simmer over medium heat. Scald and skim until clear. Add the peppercorns, cloves, mace, and salt. Scald for 1 minute.
  3. 3Throw the oysters into the pickling liquid. Let them just come to a boil. Allow the oysters to cool completely before storing. The oysters should be pickled the day before being wanted.
