Piccalilly

A traditional piccalilly recipe.

Ingredients

  • 1 peck Green tomatoes
  • 1/2 peck Onions
  • 1 head Cauliflower
  • 1 peck Small cucumbers
  • as needed Salt
  • as needed Water
  • as needed handful Horseradish, scraped
  • 1 ounce Turmeric
  • 1 ounce Whole cloves
  • 1/4 pound Whole black pepper
  • 1 ounce Cassia buds or cinnamon
  • 1 pound White mustard seed
  • 1 pound English mustard
  • as needed Cold vinegar

Instructions

  1. 1Slice the green tomatoes and onions. Break the cauliflower into florets. Slice the cucumbers.
  2. 2Place the sliced tomatoes, onions, cauliflower, and cucumbers in a container. Cover with salt and water. Let stand for 24 hours.
  3. 3After brining, put the vegetables in a large kettle. Add the scraped horseradish, turmeric, cloves, pepper, cassia buds or cinnamon, white mustard seed, and English mustard. Cover with cold vinegar. Boil for 15 minutes, stirring constantly.
