Paste No. 3
A classic pastry dough recipe.
Ingredients
- 3 cupfuls Flour
- 1/2 cupful Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
- 1 1/2 cupfuls Butter
- 1/2 teaspoonful Royal Baking Powder
- 1 cupful Water
Instructions
- 1Sift the flour. Cut the butter (or vegetable shortening) into the sifted flour and Royal Baking Powder. Mix in the water until a smooth, firm paste forms.
- 2Place the dough to cool for 15 minutes.
- 3Meanwhile, press milk and salt from butter by pressing in a clean, wet towel, and flour it.
- 4Roll out the dough on a well-floured board. Place the butter on it, fold the dough over it, completely covering the butter. Roll it out lightly to 1/2 inch in thickness. Turn it over, fold each end to the middle, flour it, and roll out again. Fold ends to the middle, and turn it. Repeat this 3 times more.
- 5Use the paste as desired.
