Oyster Sauce

A classic oyster sauce recipe.

Ingredients

  • 1 pint Oysters
  • 1/2 each Lemon juice
  • 2 tablespoonfuls Butter
  • 2 tablespoonfuls Flour
  • 1 teacup Milk
  • to taste Cayenne pepper
  • to taste Nutmeg

Instructions

  1. 1Heat the oyster liquor in a saucepan. When it boils, skim off any foam.
  2. 2Add the oysters to the boiling liquor. As soon as they boil, stir in the butter, which has been cut up and well floured. Add the spices and lemon juice.
  3. 3Boil for 5 minutes. Take from the fire and add the heated milk. Stir well and serve.
