Oyster Sauce
A classic oyster sauce recipe.
Ingredients
- 1 pint Oysters
- 1/2 each Lemon juice
- 2 tablespoonfuls Butter
- 2 tablespoonfuls Flour
- 1 teacup Milk
- to taste Cayenne pepper
- to taste Nutmeg
Instructions
- 1Heat the oyster liquor in a saucepan. When it boils, skim off any foam.
- 2Add the oysters to the boiling liquor. As soon as they boil, stir in the butter, which has been cut up and well floured. Add the spices and lemon juice.
- 3Boil for 5 minutes. Take from the fire and add the heated milk. Stir well and serve.
