Oyster Patés

A classic recipe for oyster patés.

Ingredients

  • 1 quart Oysters
  • 1 cup Butter (Originally drawn butter based upon milk. Modernized to butter.)
  • to taste Cayenne pepper
  • to taste Black pepper
  • as needed Pastry shells (Baked in paté-pans, then slipped out. Recipe does not specify how to make the pastry.)

Instructions

  1. 1Mince the oysters finely with a sharp knife.
  2. 2In a saucepan, melt the butter. Add the minced oysters, cayenne pepper, and black pepper. Stir and cook for 5 minutes, until the oysters are heated through.
  3. 3Have ready some pastry shells. Fill these with the oyster mixture. Set in a preheated oven at 350°F (175°C) for 2 minutes to heat through.
  4. 4Serve immediately.
