Oyster Pates

A classic recipe for oyster pates.

Ingredients

  • 1 quart Oysters
  • 1 cup Butter (Originally "rich drawn butter based upon milk". Substituted with butter for modern preference.)
  • to taste Cayenne pepper
  • to taste Black pepper
  • as needed Pate shells (Ready-made or homemade pastry shells.)

Instructions

  1. 1Mince the oysters finely with a sharp knife.
  2. 2In a saucepan, melt the butter over medium heat. Add the minced oysters, cayenne pepper, and black pepper to taste. Stir and cook for 5 minutes, until the oysters are heated through.
  3. 3Have ready some pate shells. Fill the shells with the oyster mixture. Place in a preheated oven at 350°F (175°C) for 2 minutes to heat through.
  4. 4Remove from oven and serve immediately.
