Orange Marmalade
A classic marmalade recipe using oranges, sugar, and water.
Ingredients
- as needed Florida or Seville oranges
- 2 times the weight of the pulp Loaf sugar
- as needed Hard water
- as needed Brandy paper
Instructions
- 1Select the best Florida or Seville oranges. Cut them in two, take out all the pulp and juice into a basin, and pick out the skins and seeds.
- 2Boil the rinds in hard water until tender, changing the water 2 or 3 times while boiling.
- 3Pound the boiled rinds in a Wedgewood mortar (or similar), add the juice and pulp. Put everything in a preserving pan with double its weight of loaf sugar, and set over a slow fire. Boil for 30 minutes or more.
- 4Put the marmalade into pots and cover tightly with brandy paper.
