Omelette Souffle

Omelette Souffle

A light and airy omelette, similar to a souffle.

Ingredients

  • 6 eggs Eggs
  • 1 teaspoonful Flour
  • 3 tablespoonfuls Powdered sugar
  • 1/8 teaspoon Salt
  • 1/2 teaspoon Royal Extract Lemon (or other flavoring)
  • 1 tablespoon Butter
  • 2 tablespoons Rum (optional)

Instructions

  1. 1Separate the 6 eggs, placing the whites in a clean, dry bowl and the yolks in a separate bowl. Beat 4 of the yolks.
  2. 2To the 4 beaten yolks, add the flour, powdered sugar, and a pinch of salt. Flavor with Royal Extract Lemon or your preferred flavoring. Mix well.
  3. 3Whisk the egg whites until they form stiff peaks.
  4. 4Gently fold the whipped egg whites into the yolk mixture. Grease a baking pan or dish with butter. Pour the mixture into the prepared pan. Bake in a preheated oven at 425°F (220°C) until well risen and lightly browned on top, about 20-30 minutes.
  5. 5Once baked, remove from the oven. You can roll it out in the dish, sift powdered sugar over it, and serve immediately. Optionally, pour some rum over it and set it on fire (omelette au rhum).
