Mountain Cake
A cake with a jelly topping.
Ingredients
- 1 cupful Butter
- 2 3/4 cupfuls Sugar
- 3 whole Eggs
- 3 yelks Egg yolks
- 1 pint Flour
- 1 3/4 teaspoonfuls Royal Baking Powder
- 1 cupful Milk
- 1 teaspoonful Vanilla Extract
- 1 cupful Red Currant Jelly
- 2 cupfuls Sugar
- 3 whites Egg whites
Instructions
- 1Rub the butter and sugar to a light white cream. Add the eggs one at a time, and the yolks all at once, beating for 5 minutes between each addition. Add the flour sifted with the baking powder, the milk, and vanilla extract. Mix the whole into a smooth, light batter.
- 2Put the batter in a shallow, square pan and bake in a moderate oven at 350°F (175°C) for 40 minutes.
- 3When the cake is cold, cover the top with the following: Beat up the jelly with the egg whites and sugar until light and stiff, then use as directed.
