Marlborough Pie
A classic pie with stewed apples, macaroons, and brandy.
Ingredients
- 1 1/2 cups Stewed apples
- 3 Eggs
- 1 tablespoonful Butter
- 1 gill Heavy cream
- 8 Macaroons
- 2 tablespoonfuls Brandy
- 2 tablespoonfuls Chopped citron
- 1 recipe Pie crust
- 1 tablespoon Egg wash
Instructions
- 1Beat macaroons fine. Combine with stewed apples and eggs.
- 2Add melted butter, cream, citron, and brandy to the apple and macaroon mixture. Mix well.
- 3Line a deep pie plate with pie crust. Wash edges with egg wash. Lay a thin rim of crust on the edges. Pour in the apple mixture.
- 4Bake in a moderate oven at 350°F (175°C) for 25 minutes, or until the crust is golden brown and the filling is set.
