London Crumpets
A classic crumpet recipe from 1888.
Ingredients
- 1 1/4 pints All-purpose flour
- 1/2 teaspoon Salt
- 1 teaspoon Granulated sugar
- 2 teaspoons Baking powder
- 1 Large egg
- 1 pint Whole milk and heavy cream (Equal parts milk and cream.)
- 1 teaspoon Ground cinnamon (Originally Royal Extract Cinnamon.)
- as needed Butter or oil (For greasing the griddle and muffin rings.)
- as needed Cottage cheese (For serving.)
Instructions
- 1In a large bowl, sift together the flour, salt, sugar, and baking powder. In a separate bowl, whisk the egg. Add the beaten egg, milk, cream, and cinnamon to the dry ingredients. Mix until a rather firm batter forms.
- 2Heat a griddle over medium heat. Grease the griddle and muffin rings generously with butter or oil. Half-fill the greased muffin rings with the batter. Bake on one side only until bubbles form and the top sets, about 10-15 minutes. Remove the rings and serve hot with cottage cheese.
