Lemon Cake No. 1

A classic lemon cake recipe from the late 19th century.

Ingredients

  • 1 cup Butter, softened
  • 3 cups Sugar
  • 7 Eggs
  • 1.5 pints Flour
  • 1 teaspoon Royal Baking Powder
  • 1 teaspoon Royal Extract of Lemon

Instructions

  1. 1In a large bowl, rub together the softened butter and sugar until light and creamy.
  2. 2Add the eggs, two at a time, beating for 5 minutes between each addition.
  3. 3Add the flour, sifted with the baking powder, and the lemon extract to the batter. Mix until just combined into a medium batter.
  4. 4Preheat oven to 350°F (175°C). Pour batter into a paper-lined tin and bake in a moderate oven for 40 minutes, or until a toothpick inserted into the center comes out clean.
