Koumiss
A fermented milk drink.
Ingredients
- 1 quart Whole milk
- 1 gill Buttermilk
- 3 lumps White sugar
- 1 teaspoonful Yeast (Used as an alternative to buttermilk.)
Instructions
- 1In a clean container, combine 1 quart of whole milk, 1 gill of buttermilk, and 3 or 4 lumps of white sugar. Mix well until the sugar dissolves.
- 2Place the mixture in a warm place for 10 hours, or until it thickens. If using yeast instead of buttermilk, add 1 teaspoonful of yeast to the milk and sugar mixture.
- 3Pour the thickened mixture from one vessel to another until it becomes smooth and uniform. Bottle the koumiss and keep it in a warm place for 24 hours (or up to 36 hours in winter). The bottles must be tightly corked and the corks tied down.
- 4Shake the bottle well for 5 minutes before opening and serving.
