Kidney Omelette

A savory omelette featuring stewed kidney.

Ingredients

  • as needed Beef kidney, finely chopped
  • as needed Salt
  • as needed Black pepper
  • 12 Eggs
  • as needed Butter

Instructions

  1. 1Chop the beef kidney very fine, similar to minced meat. Place in a stewpan, season with salt and pepper to taste. Stew for 30 minutes or more. When done, pour off the juice.
  2. 2Beat together the whites and yolks of 12 eggs. Stir the stewed kidney into the eggs. Add a lump of butter, about the size of an egg. Place the mixture back on the heat. Cook until the omelette is set and serve hot.
