Jumbles No. 1

A simple cookie recipe from the late 19th century, perfect for beginner bakers.

Ingredients

  • 1 cup Butter
  • 1 cup Sugar
  • 4 Eggs
  • 2 cups Flour
  • 0.5 teaspoon Royal Baking Powder
  • as needed Sugar for coating (For rolling the cookies in)

Instructions

  1. 1In a large bowl, rub together the butter and sugar until light and fluffy.
  2. 2Add the beaten eggs to the butter and sugar mixture. In a separate bowl, sift together the flour and Royal Baking Powder. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  3. 3Lightly flour a board or clean surface. Roll out the dough rather thinly. Cut out cookies using a jumble cutter or any cookie cutter you have. Roll each cookie in sugar to coat.
  4. 4Preheat oven to 400°F (200°C). Lay out the sugar-coated cookies on a greased baking sheet. Bake in a fairly hot oven for 10 minutes, or until lightly golden.
