Jumbles No. 1
A simple cookie recipe from the late 19th century, perfect for beginner bakers.
Ingredients
- 1 cup Butter
- 1 cup Sugar
- 4 Eggs
- 2 cups Flour
- 0.5 teaspoon Royal Baking Powder
- as needed Sugar for coating (For rolling the cookies in)
Instructions
- 1In a large bowl, rub together the butter and sugar until light and fluffy.
- 2Add the beaten eggs to the butter and sugar mixture. In a separate bowl, sift together the flour and Royal Baking Powder. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- 3Lightly flour a board or clean surface. Roll out the dough rather thinly. Cut out cookies using a jumble cutter or any cookie cutter you have. Roll each cookie in sugar to coat.
- 4Preheat oven to 400°F (200°C). Lay out the sugar-coated cookies on a greased baking sheet. Bake in a fairly hot oven for 10 minutes, or until lightly golden.
