Indian Pudding No. 1

A classic Indian pudding recipe.

Ingredients

  • 3 Corn Muffins or Bread
  • 1 1/2 pints Whole Milk (Originally 'milk'.)
  • 1/2 cupful Granulated Sugar (Originally 'sugar'.)
  • 3 Eggs
  • 1 teaspoonful Ground Ginger (Originally 'Royal Extract Ginger'.)
  • 1 teaspoonful Ground Cinnamon (Originally 'Cinnamon'.)
  • 1 pinch Salt
  • as needed Butter (For buttering the pudding dish.)

Instructions

  1. 1If using corn muffins or bread, tear or cut them into pieces. Place the muffins or bread in a bowl.
  2. 2Pour the whole milk over the muffins or bread. Allow them to soak until softened. Once soaked, squeeze the excess milk from the muffins or bread, leaving them slightly moist. Place the squeezed muffins or bread in a separate bowl.
  3. 3To the bowl with the squeezed muffins or bread, add the sugar, salt, eggs, ground ginger, and ground cinnamon. Beat the mixture until well combined.
  4. 4Bring the remaining milk to a boil. Pour the boiling milk over the muffin mixture, stirring constantly. Pour the mixture into a buttered pudding dish. Bake in a moderate oven at 350°F (175°C) for 1 hour, or until the pudding is set.
  5. 5Serve warm with Hard Sauce (not included in this recipe).
