Indian Griddle Cakes

A simple recipe for griddle cakes, similar to pancakes, from the late 19th century.

Ingredients

  • 2/3 quart Cornmeal
  • 1/3 quart Flour
  • 1 teaspoonful Brown sugar
  • 1/2 teaspoonful Salt
  • 2 heaping teaspoonfuls Baking powder
  • 2 whole Eggs
  • 1 pint Milk

Instructions

  1. 1In a large bowl, sift together the cornmeal, flour, salt, sugar, and baking powder.
  2. 2In a separate bowl, whisk the eggs. Add the beaten eggs and milk to the dry ingredients. Mix until a smooth batter forms.
  3. 3Heat a lightly oiled griddle or frying pan over medium-high heat. Pour 1/4 cup of batter onto the hot griddle for each cake. Cook for 2-3 minutes per side, or until golden brown.
