Huckleberry Pie
A classic pie featuring huckleberries, with a crust made from a simple dough.
Ingredients
- 3 cupfuls All-purpose flour
- 1/2 cupful Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
- 1 1/2 cupfuls Butter
- 1/2 teaspoonful Baking powder
- 1 cupful Water
- 3 cupfuls Huckleberries
- 1 cupful Granulated sugar
- as needed Milk
Instructions
- 1In a bowl, sift together 3 cupfuls of flour and 1/2 teaspoonful of baking powder. Cut in 1/2 cupful of butter (or lard) and 1 1/2 cupfuls of butter until the mixture resembles coarse crumbs. Gradually add 1 cupful of water, mixing until a smooth, firm dough forms. Place the dough to cool for 15 minutes.
- 2On a well-floured surface, roll out the dough. Line a pie plate with the dough. Wet the edges of the dough. Add 3 cupfuls of washed and picked-over huckleberries and 1 cupful of sugar. Cover with the remaining dough, crimping the edges to seal. Brush the top with milk.
- 3Preheat oven to 425°F (220°C). Bake for 20 minutes, or until the crust is golden brown.
