Huckleberry Griddle Cakes
Delicious griddle cakes with huckleberries.
Ingredients
- 1/2 pint Huckleberries
- 1 1/2 pints Flour
- 1 teaspoonful Salt
- 1 tablespoonful Brown sugar
- 2 teaspoonfuls Baking powder (Originally Royal Baking Powder.)
- 2 Eggs
- 1 pint Milk
Instructions
- 1Sift together flour, sugar, salt, and baking powder. In a separate bowl, whisk the eggs. Add the eggs, milk, and washed huckleberries to the dry ingredients. Mix until just combined, forming a batter that will run from a pitcher in a thick, continuous stream.
- 2Heat a griddle over medium heat until hot enough to form a crust soon as batter touches it. Pour batter onto the hot griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes, or until golden brown on both sides. Turn once more on each side to complete baking.
