Huckleberry Dumplings
A classic dumpling recipe.
Ingredients
- 2 cups Huckleberries
- 2 cups All-purpose flour
- 1/4 cup Granulated sugar
- 2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1/2 cup Butter (Originally lard. Substituted with butter for modern preference.)
- 1/2 cup Milk
Instructions
- 1In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the milk until just combined. Do not overmix.
- 2Preheat oven to 375°F (190°C). In a baking dish, spread the huckleberries. Drop spoonfuls of the dumpling dough over the berries. Bake for 25-30 minutes, or until the dumplings are golden brown and cooked through.
