Hominy Pudding
A simple pudding made with hominy, milk, eggs, and sugar, baked in a hot oven.
Ingredients
- 2/3 cupful Hominy
- 1 1/2 pints Whole milk
- 2 Eggs
- 1 tablespoonful Butter
- 1 teaspoonful Rose extract (Originally Royal Extract Rose. No modern substitute needed.)
- 1 cupful Sugar
Instructions
- 1In a saucepan, combine the hominy and milk. Bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally to prevent sticking.
- 2While the hominy is cooking, in a separate bowl, beat the eggs, rose extract, and sugar together until well combined.
- 3Once the hominy is cooked, pour it over the egg mixture, stirring to combine. Add the butter and stir until melted. Pour the mixture into a buttered pudding dish. Bake in a preheated oven at 400°F (200°C) for 20 minutes, or until the pudding is set and lightly golden.
