- 1Select vegetables that are as fresh as possible. Summer vegetables are best cooked on the same day they are harvested.
- 2Inspect the vegetables and wash them thoroughly. Cut away any decayed or unripe parts.
- 3After peeling, place the vegetables in cold water for some time before cooking.
- 4Always bring the water to a boil before adding the vegetables. Continue to boil until the vegetables are cooked to your desired tenderness.
