Three methods for preparing potatoes for breakfast.
Ingredients
- 1 pound Small potatoes
- 2 tablespoons Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
- 2 cups Mashed potatoes
- 1 Egg
- 1/4 cup Flour
- to taste Salt and pepper
Instructions
- 1Boil the small potatoes in their jackets until just tender. Do not overcook, as they will lose their shape. This should take about 10-15 minutes.
- 2Remove the skins from the boiled potatoes. Heat butter (or vegetable shortening) in a skillet over medium-high heat. Add the potatoes and fry until browned, turning gently from side to side. Season with salt and pepper.
- 3Heap mashed potatoes on a small mound or oval platter; shape it like a pyramid and perfectly smooth. Cover with a well-beaten egg and bake in a preheated oven at 350°F (175°C) until browned, about 15-20 minutes.
- 4Make little cakes of cold mashed potatoes. Flour your hands well, and put on as much flour as will stick on the outside of the cakes. Scatter flour on the plate on which you lay them. Fry them brown in butter (or vegetable shortening).
