Ham Omelette
A classic omelette featuring ham.
Ingredients
- 3 pounds Ham (Originally ham.)
- 7 Eggs (Originally eggs.)
- 4 tablespoonfuls Milk (Originally milk.)
- 1 pinch Black pepper (Originally pepper.)
- 1 pinch Salt (Originally salt.)
- 1 tablespoonful Butter (Originally butter.)
Instructions
- 1Broil the ham until heated through. Chop the ham very fine, like mince-meat.
- 2Beat together the eggs (white and yolks) with a few whirls of a whisk. Add the milk and beat fast for 1 minute.
- 3Stir the chopped ham into the egg mixture. Pour the mixture into a frying pan in which the butter is heating (but not hissing). Shake the pan briskly over the heat, slipping a spatula under the omelette to prevent sticking. In 4 minutes, double the omelette over in the middle. Turn it out onto a hot dish by inverting the pan and serve immediately.
