Green Tomato Catsup
A traditional catsup recipe using green tomatoes.
Ingredients
- 1 peck Green tomatoes
- 12 Large onions
- 1/2 pint Salt
- 1/4 pound Mustard seed
- 3 dessertspoons Sweet oil
- 1 ounce Allspice
- 1 ounce Cloves
- 1 ounce Ground mustard
- 1 ounce Ground ginger
- 2 tablespoonfuls Black pepper
- 2 teaspoonfuls Celery seed
- 1/4 pound Brown sugar
- 2 cups Vinegar
Instructions
- 1Slice the green tomatoes and onions. Layer them in a large bowl or container, alternating layers of tomatoes and onions with layers of salt. Let stand for 24 hours.
- 2After 24 hours, drain the tomato and onion mixture, discarding the liquid.
- 3In a preserving pan or large pot, combine the drained tomato and onion mixture with the mustard seed, sweet oil, allspice, cloves, ground mustard, ground ginger, black pepper, celery seed, brown sugar, and vinegar. Bring to a boil, then reduce heat and simmer for 2 hours, or until the catsup has thickened to your desired consistency.
