Green Pea Soup
A classic green pea soup recipe.
Ingredients
- 2 quarts Green peas
- 4 quarts Water
- 1 small Onion
- 1 small Fresh mint sprig
- 1 tablespoonful All-purpose flour
- 2 tablespoonful Butter
- to taste Black pepper
- to taste Salt
- as needed Toasted bread sippets
Instructions
- 1Combine the green peas and water in a large pot. Bring to a boil and cook for 2 hours, adding fresh boiling water as needed to maintain the liquid level.
- 2Strain the peas from the cooking liquid. Return the liquid to the pot. Rub the cooked peas through a sieve to create a puree.
- 3Finely chop the onion and the mint sprig. Add them to the pot with the pea puree and cooking liquid. Bring to a boil and cook for 10 minutes.
- 4In a separate pan, melt the butter. Stir in the flour and cook for a minute to make a roux.
- 5Add the roux to the boiling soup, stirring constantly until smooth. Season with pepper and salt to taste.
- 6Serve the soup hot, garnished with well-buttered toasted bread sippets.
