Green Pea Soup

A classic green pea soup recipe.

Ingredients

  • 2 quarts Green peas
  • 4 quarts Water
  • 1 small Onion
  • 1 small Fresh mint sprig
  • 1 tablespoonful All-purpose flour
  • 2 tablespoonful Butter
  • to taste Black pepper
  • to taste Salt
  • as needed Toasted bread sippets

Instructions

  1. 1Combine the green peas and water in a large pot. Bring to a boil and cook for 2 hours, adding fresh boiling water as needed to maintain the liquid level.
  2. 2Strain the peas from the cooking liquid. Return the liquid to the pot. Rub the cooked peas through a sieve to create a puree.
  3. 3Finely chop the onion and the mint sprig. Add them to the pot with the pea puree and cooking liquid. Bring to a boil and cook for 10 minutes.
  4. 4In a separate pan, melt the butter. Stir in the flour and cook for a minute to make a roux.
  5. 5Add the roux to the boiling soup, stirring constantly until smooth. Season with pepper and salt to taste.
  6. 6Serve the soup hot, garnished with well-buttered toasted bread sippets.
