Graham Griddle Cakes
A recipe for griddle cakes made with graham flour, cornmeal, and flour.
Ingredients
- 1 pint Graham flour
- 1/2 pint Corn meal
- 1/2 pint All-purpose flour
- 1 heaping teaspoonful Brown sugar
- 1/2 teaspoonful Salt
- 2 teaspoonfuls Baking powder
- 1 Egg
- 1/2 pint Milk
- 1/2 pint Water
Instructions
- 1In a large bowl, sift together the Graham flour, corn meal, all-purpose flour, brown sugar, salt, and baking powder.
- 2In a separate bowl, beat the egg. Add the beaten egg, milk, and water to the dry ingredients. Mix together until a smooth batter forms. The batter should not be too thin; if it is too thin, the cakes will break apart.
- 3Heat a griddle over medium heat until hot. Pour batter onto the hot griddle in circles about the size of a tea saucer. Bake until brown on one side, then carefully flip and brown the other side. Stack the cooked cakes on top of each other. Serve very hot with sugar, milk, cream, or maple syrup.
