Graham Cup Cake

A simple cake recipe using Graham flour.

Ingredients

  • 3/4 cupful Butter
  • 1 cupful Sugar
  • 1/2 cupful Heavy Cream
  • 2 count Eggs
  • 2 cupfuls Graham flour
  • 1 teaspoonful Baking Powder
  • 1 teaspoonful Lemon Extract

Instructions

  1. 1In a large bowl, rub the butter and sugar together until light and creamy. This may take a few minutes.
  2. 2Add the eggs one at a time, beating for a few minutes after each addition until fully incorporated.
  3. 3Sift together the Graham flour and baking powder in a separate bowl.
  4. 4Add the sifted Graham flour mixture, cream, and lemon extract to the butter mixture. Mix until just combined, forming a moderately thin batter.
  5. 5Preheat oven to 350°F (175°C). Grease muffin cups or muffin pans. Fill the cups about 2/3 full. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
