Ginger Cake

A classic ginger cake recipe from 1888.

Ingredients

  • 0.75 cup Butter
  • 2 cups Sugar
  • 4 Eggs
  • 1.5 teaspoons Royal Baking Powder
  • 3 cups Flour
  • 1 cup Milk
  • 1 tablespoon Royal Extract Ginger

Instructions

  1. 1In a large bowl, rub together 3/4 cup of butter and 2 cups of sugar until light and creamy.
  2. 2Add 4 eggs, two at a time, beating for 5 minutes between each addition.
  3. 3In a separate bowl, sift together 1 1/2 teaspoons of Royal Baking Powder and 1 1/2 pints (3 cups) of flour. Add the flour mixture, 1 cup of milk, and 1 tablespoon of Royal Extract Ginger to the batter. Mix until smooth.
  4. 4Preheat oven to 350°F (175°C). Pour the batter into a greased and floured cake tin. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center comes out clean.
