German Puffs

A classic German pastry recipe.

Ingredients

  • 1 pint All-purpose flour
  • 2 tablespoonfuls Granulated sugar
  • 1 pinch Salt
  • 1 1/2 teaspoonfuls Baking powder
  • 3 tablespoonfuls Butter
  • 4 Eggs
  • 2 ounces Sweet almonds
  • 3 drops Almond extract
  • 1/2 pint Heavy cream
  • 1/2 cupful Sultana raisins
  • 1/2 wineglass Rum

Instructions

  1. 1Blanch the almonds. Measure out all ingredients.
  2. 2In a bowl, cream together the butter and sugar until light and fluffy.
  3. 3Add the eggs one at a time, beating for 3-4 minutes after each addition.
  4. 4In a separate bowl, sift together the flour, salt, and baking powder.
  5. 5Add the dry ingredients, almonds, raisins, almond extract, cream, and rum to the butter mixture. Mix until just combined, forming a smooth batter.
  6. 6Grease muffin cups. Fill the cups about 2/3 full with the batter.
  7. 7Preheat oven to 400°F (200°C). Bake for 20 minutes. Insert a toothpick into the center; if it comes out clean, they are ready. If not, bake for a few more minutes.
