German Puffs
A classic German pastry recipe.
Ingredients
- 1 pint All-purpose flour
- 2 tablespoonfuls Granulated sugar
- 1 pinch Salt
- 1 1/2 teaspoonfuls Baking powder
- 3 tablespoonfuls Butter
- 4 Eggs
- 2 ounces Sweet almonds
- 3 drops Almond extract
- 1/2 pint Heavy cream
- 1/2 cupful Sultana raisins
- 1/2 wineglass Rum
Instructions
- 1Blanch the almonds. Measure out all ingredients.
- 2In a bowl, cream together the butter and sugar until light and fluffy.
- 3Add the eggs one at a time, beating for 3-4 minutes after each addition.
- 4In a separate bowl, sift together the flour, salt, and baking powder.
- 5Add the dry ingredients, almonds, raisins, almond extract, cream, and rum to the butter mixture. Mix until just combined, forming a smooth batter.
- 6Grease muffin cups. Fill the cups about 2/3 full with the batter.
- 7Preheat oven to 400°F (200°C). Bake for 20 minutes. Insert a toothpick into the center; if it comes out clean, they are ready. If not, bake for a few more minutes.
