Fried Parsnips

A simple recipe for fried parsnips.

Ingredients

  • Parsnips
  • Flour
  • Butter (or vegetable shortening or neutral oil) (Originally lard or dripping. Substituted with butter, vegetable shortening, or neutral oil for modern preference.)
  • Salt
  • Water

Instructions

  1. 1Scrape the parsnips. Cut them into long slices.
  2. 2Boil the parsnip slices in a little hot water, salted, until tender.
  3. 3Dredge the parsnip slices with flour. Fry them in hot butter, vegetable shortening, or neutral oil until golden brown. Drain off the excess fat.
  4. 4Serve immediately.
